Chocolate Chip and Chocolate No Bake Cookies


These to cookies are our boys favorite cookies. When school is in I end up making a batch of each of these cookies every weekend. The chocolate chip cookies have cream cheese in them to help them stay rich and moist. The no bake cookies I used to have a problem with, I could never get them to harden, until I started to use almond bark in place of the coco. These to cookies are a family favorite and are always mmm mmm good.

Chicken Broccoli Casserole


Tonight my wife made chicken broccoli casserole, which was a lot better then this picture. This delicious dish is made with a bag of frozen broccoli, chicken breasts, and cheese. Baked for almost an hour this is not a weeknight meal for sure, but a great weekend meal for a good tummy warmer on a cold day.

Taco Bake


Tonight we had a casserole, taco bake, with a mexican twist. This delicious dish, my wife made, has refried beans, tortilla chips, cheddar cheese, and other mexican staples. The black olives and salsa made it a cross between a burrito and enchiladas, witch are both favorites of ours. She made the icetea also. Southeren tex-mex at it's best. Mmm mmm good!

Cranberry and Apricot Bars

Our country dinner ended with a very tasty harvest dessert, Cranberry and Apricot Bars. This tasty treat has a few interesting combinations. The cranberry's and apricots are paired with honey and orange juice for a surprisingly sweet desert. A dollop of cool whip, a dash of cinnamon and it's mmm mmm good.

Chicken Pot Pie

Tonight was, from scratch, Chicken Pot Pie. This home style favorite is made with carrots, corn, and green beans. All the veggies were bought frozen and thawed out before I put them in. This, I feel, helps the pie taste like it was made with fresh veggies right from the garden no matter what time of year you make it. I also used chicken gravy mix to season the roue and milk mixture in the pie.

Grilled Steak, Onions with Balsamic vinegar, and French Fries

Tonight was another Rachel Ray recipe, Steak, Onions with Balsamic vinegar, and French Fries. I grilled the steak and sauteed the onions with balsamic vinegar well Amber handled the french fries.
Theses she fried the way her granny does, the way Trenton likes them, in a cast iron skillet in about a inch of oil. We could make them in the fry daddy but, Trenton does not like them this way, even though it's the same thing...... whatever.
The meal was good, most likely a repeat.

Chocolate Cookies with White Chips

This is a cookie recipe that I am trying to develop. This is my second attempt, I had made them before and needed to make some adjustments. This is may second try at them and they seem to have turned out rather well.
I use a cup of chocolate syrup to give it's flavor, witch seems to give it a brownie consistence. I also use a teaspoon of instant coffee to give it a richer chocolate taste.

Spinach and Mushroom Lasagne Rolls

This is a Rachael Ray recipe that sounded good and I wanted to try, it turned out really well considering that I did not have the gorgonzola cheese to make the sauce or the mozzarella to put on top, sorry Rach.
I ended up making my own tomato sauce out of tomato paste, tomato sauce, and sliced mushrooms. In place of the mozzarella I put parmesan cheese on top.
Their was no meat in this dish, but I think that sausage would work well in the mushroom and spinach filling.

The food of Patch of Heaven

Here at Patch of Heaven we enjoy time with family and good food, wither it's dinner with the four of us or our annual Christmas eve party. Food is a big part of our lives and the time we shear together, so I have deiced to share with y'all some of our favorite recipes.
We are not chefs of any kind nor have we ever been. We do however enjoy creating delicious meals and decadent desserts to share with our friends and family. Fall is just around the corner soon the air will chill, the days will shorten, and our kitchen will fill with the aroma of the holidays.
